One of the emerging areas of scientific research is the effect of food form on energy balance. In this pre-conference symposium two researchers will offer their perspectives on what this could mean for the critical issue of obesity. Two food industry scientists will share strategies that the food industry is exploring or utilizing to build from the food form research findings. This has implications for both renovation of existing food products and innovation of new offerings.
